INGREDIENTS
- 6 Cups Organic Unbleached White Flower
- 8 Tablespoons Avocado Oil
- 2 Cups Boiled Water
- 2 teaspoons of kosher salt
- 2 Pounds of Pork (I ground pork shoulder/butt)
- 1 Carrot (grated)
- Small Onion (optional)
- Salt and Pepper to Taste
GUIDE / INSTRUCTIONS
- Prepare the Filling
- In a large mixing bowl:
- Add 2 cups hot water
- 1/2 cup flour
- Salt
- Mix well.
- Using a stand mixer:
- Gradually add remaining flour (about 1/2 cup at a time)
- Mix until fully incorporated (about 4-5 minutes)
- Cover the bowl with a clean towel to prevent drying.
- Divide the dough into smaller portions (about 1/2 cup each).
- Roll each portion into a flat circle (about 1/4 inch thick).
- Use a cookie cutter or glass to cut out circles (about 3 inches).
- Place 1 ice cream scoop worth of filling in the center of each circle.
- Fold the dough over the filling and press edges together to seal.
- Repeat until all pierogi are made.
- Boil large pot of water and add pierogi when water is ready.
- Stir to prevent from sticking.
- Boil until ready, about 10 min. Do not eat raw pork. Check by taking one out and cut in half. Meat should not be red.
NOTES
You can freeze extras by placing into a plate and into the freezer for 10 min. Take out and load into the zip bag and freeze.
