  • 1 Rack of Pork Ribs Cut to Individual Ribs (Baby Back or St. Luis Style)

  • 1 Cup Brown Rice
  • 4 Sweet or Japanese Purple Potatoes
  • 1 Daikon Radish Cut into Half and Sliced into 1/4 in Thick
GUIDE / INSTRUCTIONS

Step 1: Prepare Side Dishes

  • Prepare brown rice (1 cup rice = 2 cups water)
  • Prepare potatoes
  • Steam it per your steamer direction (90 min on mine machine)

Step 1: Pre-Boil Ribs

  • Fill a large pot with enough water to cover the ribs.
  • Add sliced ginger and optional Star Anise and Garlic Cloves (if using).
  • Bring to a boil.
  • Carefully add the pork ribs after boiling aromas for 2 minutes.
  • Return to a boil, then reduce heat and simmer for 5 minutes.
  • Drain and set ribs aside.

Step 2: Braise Ribs

  • Add avocado oil to wok and heat up wok on high.
  • Add ribs and brown it.
  • Add Chinese cooking wine and cook covered until wine is reduced in half.
  • Add bean garlic paste, mix for 1 min.
  • Add Dark soy sauce.
  • Add Soy sauce to taste (might not be needed)
  • Add Hot water.
  • Add sliced daikon.
  • Bring to a boil, then reduce heat to low and put wok cover. Simmer, covered, for 1.5-2 hours or until ribs are tender. Takes less time for baby back ribs, about 1 hour. Should be soft.

Step 3: Finish and Serve

  • Remove ribs from sauce.
  • Serve along brown rice and potatoes.
NOTES

For tender ribs, ensure they're fully submerged in liquid.
